Collagen Coconut Muffins Recipe

*CONTAINS EGGS, NUTS, MILK AND OATS

12 muffins
Ingredients 
  • 1 egg
  • 235ml vanilla almond milk
  • 115g honey
  • 1 tsp vanilla extract
  • 210g oat flour
  • 1 tsp baking powder
  • 2 scoop Vital Proteins Coconut Collagen Creamer
  • 1/4 tsp salt
  • Shredded coconut - for topping

Instructions

1.

Preheat the oven to 200°C.

2.

Mix all of the wet ingredients for the muffins in a mixing bowl until smooth.

3.

Add the dry ingredients for the muffins to the bowl and mix until well combined.

4.

Pour the mixture evenly into a greased muffin pan (muffin liners optional).

5.

Top each muffin with the desired amount of coconut shreds.

6.

Bake the muffins for 25 minutes in the oven.

7.

Let the muffins cool for 5-10 minutes and enjoy!
